Easy and healthy lunches for moms and kids

Packing a lunch for yourself and your kids can be a challenge. While bringing a lunch to school is often healthier and more affordable than buying a lunch every day, many moms and kids simply come to a point where they are sick of the same old, same old day after day.

Education.com recently featured a list of healthy and easy-to-make lunch box options for students of all ages. Instead of the same peanut butter and jelly sandwich each day, the website recommends putting a different spin on this classic by using two whole grain waffles instead of bread. Another interesting variation is a peanut butter and banana sandwich, often referred to as "The Elvis."

Pita bread can also help add some variation to your lunches. Whether you stuff them with turkey, ham or salad, they are a delicious (and fun) alternative to regular sliced bread. Education.com recommends "The Mediterranean," which consists of whole wheat pita triangles served with hummus and various veggie sticks.

Wraps are also available in different flavors and can be used for any type of sandwich. It's amazing how different your favorite will seem on a new, unique type of bread! Try spreading plain or flavored cream cheese onto a wrap before adding your favorite meats or vegetables.

Those who aren't fans of sandwiches can opt for a yogurt parfait (low-fat yogurt layered with granola and fruit), a pasta salad made with whole wheat pasta, veggies and chicken, a chef's salad or any other type of salad instead.

Looking for a quick and easy lunchtime option for those really busy days? Try what Education.com refers to as "The Hiker." Just grab a handful of low-sodium almonds, an apple and a cheese stick and you're good to go.

Whether you're packing lunch for yourself or your kids, remember to stay away from juices and sodas with a high sugar content. Opting for water or milk instead will help you and your little ones avoid the sugar crash and that afternoon sluggish feeling.
